Lactobacillus delbrueckii subsp. bulgaricus, also know as Lactobacillus bulgaricus, is one of the most widely used starter culture strains in industrial fermented dairy manufacture [1]. This Gram-positive bacillus is anaerobic, eosinophilic, non-pathogenic and is marketed as a probiotic due to its health benefits. The single end product of its carbohydrate fermentation is lactic acid, with the main product being d (-) lactic acid, which can be defined as homofermentative lactic acid bacteria. It is commonly found in some fermented products, such as yogurt and cheese.

Lactobacillus delbrueckii subsp. bulgaricus has some potential health benefits, but there is not enough research and evidence. Its possible effects include reducing intestinal tissue damage, improving intestinal flora dysfunction, repairing intestinal mucosal barrier destruction caused by Salmonella typhimurium infection, and having certain anti-tumor and anti-inflammatory effects. Here are some health conditions in which it may play a role.
Lactobacillus bulgaricus is one of the main strains of yogurt starter due to its excellent lactic acid production ability, and is mainly used in the production of yogurt products. Furthermore, it can be used as a probiotic supplement, but it is not FDA-approved and lacks solid clinical research. Therefore, please consult your doctor before taking supplements.
