Mannan-oligosaccharide (MOS), also called Mannose oligosaccharide, belongs to a class of functional oligosaccharides, and it is composed of 2-7 mannose units linked by β-1,4 glycosidic bonds. It is obtained by partially hydrolyzing mannans polysaccharide. Mannan oligosaccharide is indigestible and can act as prebiotic to provide health benefits. It has favorable physical and chemical properties such as low calories, high stability, and non-toxicity. As a result of these characteristics, MOS has significant application value in the food, feed, and other industries.

MOS is naturally found in the cell walls of konjac flour, guar gum, sesame gum, and various microorganisms. The structure of mannan-oligosaccharides is divided into two types. One is composed of glucose and mannose residues through α-1,6, α-1,2, α-1,3, β-1,4 and β-1,3 glycosidic bonds while the other is formed by connecting several mannan oligosaccharide units. MOS is easily soluble in water, easy to absorb moisture, and insoluble in organic solvents. It has acid-resistant, high-pressure resistant, and high-temperature resistant properties. For example, the structure and properties of MOS are stable even when heated at 120°C. Besides, MOS has a certain viscosity, which is lower at higher temperatures. In summary, MOS has stable physical and chemical properties, so it can maintain a stable structure and function in the high-temperature conditions of food or feed processing.
