Mannan-oligosaccharide

DS70858456

Mannan-oligosaccharide (MOS), also called Mannose oligosaccharide, belongs to a class of functional oligosaccharides, and it is composed of 2-7 mannose units linked by β-1,4 glycosidic bonds. It is obtained by partially hydrolyzing mannans polysaccharide. Mannan oligosaccharide is indigestible and can act as prebiotic to provide health benefits. It has favorable physical and chemical properties such as low calories, high stability, and non-toxicity. As a result of these characteristics, MOS has significant application value in the food, feed, and other industries. There are feed grade and food grade mannan oligosaccharides. Here, we mainly provide food grade mannan oligosaccharides.

Description

MOS is naturally found in the cell walls of konjac flour, guar gum, sesame gum, and various microorganisms. The structure of mannan-oligosaccharides is divided into two types. One is composed of glucose and mannose residues through α-1,6, α-1,2, α-1,3, β-1,4 and β-1,3 glycosidic bonds while the other is formed by connecting several mannan oligosaccharide units. MOS is easily soluble in water, easy to absorb moisture, and insoluble in organic solvents. It has acid-resistant, high-pressure resistant, and high-temperature resistant properties. For example, the structure and properties of MOS are stable even when heated at 120°C. Besides, MOS has a certain viscosity, which is lower at higher temperatures. In summary, MOS has stable physical and chemical properties, so it can maintain a stable structure and function in the high-temperature conditions of food or feed processing.

Function

Pregnant women

  • Improve the metabolism of lipids and reduce the total cholesterol concentration of triglycerides in human serum.
  • Enhances immunity. MOS is immunogenic, and can strength the body's immune response.
  • Regulate the gastrointestinal microbiota, promote the proliferation of beneficial bacteria, inhibit the growth of harmful bacteria, and improve the balance of intestinal flora, thereby forming a benign microbial ecological state.
  • Excellent antioxidant properties.
  • Ability to adsorb mycotoxins and intestinal pathogens.

Application

Feed

MOS acts as a non-toxic, side-effect-free green feed additive that can eliminate the adverse effects of antibiotics. It can significantly increase animal production, enhance animal immunity, prevent diseases, etc.

Food

MOS an effective bifid factor. As a functional food ingredient, MOS has a series of health benefits, including lowering blood lipids, resisting colon inflammation, enhancing immunity, and regulating intestinal flora. Considering these health benefits, dietary MOS has a great prospect of food application. MOS has the following specific applications in the food industry.

  • Due to its sweetness, MOS can be used as a sweetener to improve the taste and flavor of bread, macaroni and other foods.
  • Due to its low calorie content, MOS can be added as a food ingredient to functional foods for healthy diets.
  • Because it can inhibit the aging of starch, MOS can be used in dairy products, meat products, baked products, pasta, seasoning foods and other foods to extend shelf life.
