The main components of rice are starch and protein, which account for about 80% and 100% of the mass of rice respectively. Rice protein is made by grinding rice grains and separating the starch from the protein, and consists primarily of four proteins: albumin, globulin, prolamin, and glutenin. It contains nine essential amino acids, including phenylalanine, valine, tryptophan, threonine, isoleucine, methionine, histidine, leucine, and lysine.
