Xylo-oligosaccharide (XOS) is a mixture of oligosaccharides and is composed of xylose units linked by β-(1→4) bonds with DP ranging from 2 to 10. It is obtained from xylan-rich plants through xylanase hydrolysis, separation and refinement. Xylobiose and xylotriose are the main active components, with xylobiose promoting the proliferation of Bifidobacteria most effectively. As a non-digestible functional oligosaccharide, XOS has great prebiotic potential. It can regulate the intestinal flora, promote the absorption of minerals in the intestinal tract, and also has anti-tumor and anti-caries effects.

As a non-digestible prebiotic, XOS is not degraded by stomach acid and digestive enzymes, nor absorbed by the gastrointestinal mucosa. It can promote the proliferation of beneficial bacteria in the intestinal tract and make them the dominant flora. In contrast, Staphylococci, Escherichia coli and many Clostridium in the gut are unable to utilize XOS. As a consequence, XOS plays a key role in maintaining the balance of intestinal flora due to its selectivity.
Calcium deficiency may lead to osteoporosis, osteomalacia and other diseases, while iron deficiency can lead to iron deficiency anemia, decreased immunity and other problems. XOS is beneficial for the human body to absorb calcium and iron, increasing bone density and reducing osteoporosis risk. Furthermore, XOS promotes the growth of beneficial bacteria, solubilizes calcium and magnesium ions, and facilitates their absorption.
XOS can significantly promote the proliferation of bifidobacteria in the intestinal tract. In addition to their anti-cancer effects, Bifidobacteria also have immune activation. They can enhance the phagocytic activity of lymphocytes and directly kill tumor cells, thereby protecting the body from damage caused by tumor substances.
XOS is not easily fermented by Streptococcus mutans in the oral cavity. When combined with sucrose, XOS can prevent sucrose from being acted upon by Streptococcus mutans to generate water-insoluble polymer dextran, thereby exerting the anti-caries effects. XOS also has an obvious effect on getting rid of bad breath. This is because it can inhibit the proliferation of harmful bacteria, and reduce the production of bad smelling gases.

XOS is suitable for weight loss products since it does not generate energy and can reduce human energy intake and increase body fat metabolism.
The good acid and heat resistance of XOS makes it widely used in dairy products. It not only retains the health function of dairy products, but also promotes beneficial intestinal bacteria to facilitate trace element absorption.
When heated with coexisting amino acids, XOS is easier to color than fructose in bakery products. It is also able to retain moisture in products to extend shelf life.
